A decade ago, Scottish cuisine was a bit of a deep-fried joke. Now the food and drink sector is one of our biggest employers and Scottish produce is in demand throughout the world, delivering record exports last year. The Ambition 2030 plan aims to double the value of the industry to £30 billion in the next 12 years.
To get to that target will require hard work, talent and confidence. In Scotland we have some of the best produce available anywhere plus innovative and exciting manufacturers and top restaurateurs with more Michelin stars in Edinburgh than any other city outside London.
